Ingredients:

  • 2 lb chuck roast

  • 1-2 tbsp beef tallow (or butter, duck fat, or bacon grease)

  • 4 oz water

  • (Optional) Salt to taste (added after cooking)

Instructions:

1. Sear the Roast:

  • Heat a cast iron pan over high heat.

  • Add beef tallow (or your fat of choice) to grease the pan.

  • Once the pan is smoking, reduce heat to medium.

  • Sear the chuck roast for 90 seconds on each side to develop a flavorful crust.

(Pro tip: Wear an apron—this gets messy!)

2. Slow Cook:

  • Transfer the seared roast to a crockpot.

  • Add 4 oz of water (the meat will release its own juices as it cooks).

  • Cover and cook on low heat for 6 hours.

3. Serve & Enjoy:

  • Shred with a fork—it should be fall-apart tender!

  • Add salt to taste after cooking.

  • I added grilled onions on top of mine for extra flavor.
