EGG NOODLES
If you're craving pasta without the grains, this egg-based noodle recipe is as simple as it gets! Made with just one ingredient—eggs—these noodles are light, delicious, and perfect for pairing with your favorite sauces and toppings. A great way to enjoy a pasta-like dish while keeping it wholesome and nourishing!

Ingredients:

8-10 oz ground beef

1 tsp Italian seasoning

3 eggs
-
1–2 tbsp beef tallow or avocado oil

½ cup Primal Kitchen or Rao’s tomato sauce
-
(Optional) Parmesan cheese for topping

(Optional) Salt to taste

Instructions:
1. Make the Meatballs:

Mix ground beef with Italian seasoning in a bowl.

Roll into 6 evenly sized meatballs.

Heat a cast iron pan over medium heat.

Cook the meatballs until browned and fully cooked through, turning as needed.

2. Make the Egg Noodles:

Crack 3 eggs into a cup and whisk with a fork.

Heat a non-stick or greased pan (coated with beef tallow or avocado oil) over low to medium heat.

Pour in the egg mixture, letting it spread into a thin layer like a crepe.

Cover with a lid and cook for 60–120 seconds until set.

Flip the egg crepe out onto a cutting board and slice into thin, noodle-like strips.

3. Assemble & Enjoy:

Place the egg noodles in a bowl.

Top with warm tomato sauce and the meatballs.

Sprinkle with Parmesan cheese and salt to taste.
