FAJITAS
Enjoy all the flavor of fajitas without the carbs! These fajitas are wrapped in a 10-second cheese tortilla, making them a quick and easy low-carb alternative. Filled with sizzling juicy meat, and all the tasty toppings, it’s a deliciously simple meal that’s both satisfying and guilt-free!

Ingredients:
For the Cheese Wraps:

1.5 oz shredded cheese (cheddar, Colby Jack, or mozzarella work well)

For the Fajita Filling:

½ lb beef fajita strips

1 tbsp beef tallow (or preferred cooking fat)
-
½ onion, sliced
-
Salt and pepper, to taste
-
Optional: chili powder, cumin, garlic powder

Toppings:

Sour cream
-
Guacamole
-
Extra grilled onions

Instructions:
Make the Cheese Wraps:

Place 1.5 oz of shredded cheese on a piece of parchment paper.

Microwave for 20 seconds until the cheese is melted and bubbling.

Immediately sandwich the melted cheese between two pieces of parchment paper and gently spread it into a circular wrap shape.

Place in the fridge for 1 minute to set.

Make the Fajita Filling:

Heat beef tallow in a cast iron pan over medium-high heat.

Add the sliced onions and cook until softened and slightly caramelized.

Add the beef fajita strips to the pan, season with salt, pepper, and optional spices, and cook until browned and fully cooked (about 5–7 minutes).

Remove from heat.

Assemble the Fajitas:

Remove the cheese wraps from the fridge and gently peel off the parchment paper.

Fill each cheese wrap with cooked fajita beef, grilled onions, a dollop of sour cream, and guacamole.

Fold and enjoy warm like a traditional fajita.
